You’re dubious. I know. Allow me to convince you.
Believe me. I get where you’re coming from. I was dubious two. I mean…. 2 ingredients? Amazing? Cookie? These words HARDLY go together, right?
But hear me out. You don’t have much to lose. Give it a try and I promise, you’ll be as impressed with it as I was.
2 Ingredient Banana Cookies
2 very ripe bananas
1 cup old fashioned oats (Buy them HERE)
1. Grind up the oats in a food processor. You don’t want to pulverize them into dust but you want them to be broken up. I would say that half of the oats were a little coarser than flour and the other half were sorta chopped.
2. Mash the banana.
3. Combine the two ingredients and put on an oiled cookie sheet in dollops.
4. Bake at 350 degrees for 15 minutes.
Yes. That’s really all you do. And yes, they really do taste good.
Note: Want to take these banana cookies from yummy to DELICIOUS!? Throw in some extras. I did chocolate chips (I like these) with 1/3 of the batter. I did raisins and vanilla with 1/3 of the batter and the final third was just the bananas and oats. The kids liked the chocolate chip ones the best (of course) but I was pretty partial to the raisin and vanilla ones. You can also throw in nuts and/or cinnamon. I suspect there are TONS of combinations that you could come up with. Get creative and be impressed. I know I was.
