Sometimes you just need a simple chocolate cake.
Y’all know that I’m not into the boxed stuff, though, right? It’s got to be from scratch. No question.
I’ve been working on my chocolate cake recipe for a while. I started with one from Betty Crocker – http://amzn.to/Nw0CL7 but it wasn’t exactly right (in my opinion).
So I messed with proportions, threw in an extra egg, omitted the vinegar and here’s what I came up with.
Simple Chocolate Cake
1 1/2 cup all purpose flour
3/4 cup sugar
1/4 cup cocoa
1 tsp baking soda
1/4 tsp baking powder
1/2 tsp salt
1/3 cup softened butter
1/2 tsp vanilla
1 cup cold water
1. Preheat oven to 350.
2. Grease your and flour your pan. I like to make mini cakes, so I use a mini cake pan but you can do whatever you want. If you use a regular size cake pan, this recipe will make just one layer.
3. Mix dry ingredients in a large bowl. Mix wet ingredients in a separate, medium size bowl.
4. Pour wet ingredients into the dry ingredients and mix vigorously for a minute or so. You want it to be well blended.
5. Bake for 30 minutes or so. It will vary on pan size. You know it’s done when a toothpick comes out clean.
This cake is perfect for a birthday party or…. well, just about any day of the week. I made it on a Sunday afternoon because sometimes you just need a simple chocolate cake.
I frosted this simple chocolate cake with homemade chocolate buttercream frosting because well, it’s delicious. The only thing that makes chocolate cake better is more chocolate.
