Buttery Whole Wheat Biscuits

Buttery Whole Wheat Biscuits :: Five Little Homesteaders

I made biscuits last week.

What?  You want more information?

Of course you do!  Because come on – biscuits are delicious.

Soaked Biscuits

First of all, these biscuits incorporate properly prepared grains.

(Now is when you ask me, what that means?)

In this recipe the grains are soaked (specifically with apple cider vinegar) for 24 hours. Why is this necessary?  Well, it has to do with your body’s ability to properly digest the grains.  But, instead of going into the whole thing here,  I’ll let an expert tell you why.  Halle from Whole Lifestyle Nutrition has a great post on properly soaking and preparing grains and legumes – http://wholelifestylenutrition.com/articles/is-soaking-grains-and-legumes-necessary-and-how-to-properly-soak-and-prepare-them/  that you should check out.

As you can see in the picture, I used a recipe and not one that I came up with on my own.

You see, I’m still a “real food newbie.”  I’m doing a lot of stuff right but when it comes to soaking, fermenting and “properly” preparing a lot of things, I’m just getting started.  (I haven’t even bought Nourishing Traditions yet! *gasp*)  That’s why I still use recipes from other people a lot of the time.

In this case, I’ve turned to Shaye Elliot of The Elliot Homestead (you know her, of course, right?) and her amazing cookbook From Scratch – https://www.e-junkie.com/ecom/gb.php?cl=236617&c=ib&aff=249672 . (You can also get it in hard copy format on Amazon.  How cool is that!?)

Her book is amazing.  If you haven’t had a chance to check it out, now is a great time because it is  on sale – https://www.e-junkie.com/ecom/gb.php?cl=236617&c=ib&aff=249672 for just $8.49 (in digital form).  (The sale price show up once you put it in you “cart.”)

Personally, I would love to have it in paperback as a physical book (which, as I mentioned, you can buy on Amazon) but the digital version works just fine too and you most certainly can’t beat the price.  As you can see in the picture above, I just printed out the recipe (only 1 page!) that I wanted to use.  Then I can save it and use it again and again.

Take a moment to check out the book.  I’m sure you’ll be as impressed as I am.
