Oh mint. I love you and I hate you.
On one hand, you smell lovely and you make things taste delicious. On the other hand, you invade my garden and pop up EVERYWHERE that you do not belong. You are like an ex-boyfriend who just won’t go away.
Last spring I planted two mint plants – peppermint and spearmint. They were gifted to me and they were beautiful. I stuck those babies in the ground without a second thought. Well, those of you who are seasoned gardeners out there will know what I am now dealing with…..MINT. MINT. And more MINT. It is EVERYWHERE. It’s a good thing I like the smell.
I decided since I have so much of it, I might as well start figuring out what to do with it. The first thing I’ve done (aside from making tea) is figured out how to make mint syrup.
How to Make Mint Syrup
1 cup mint leaves – (I used peppermint)
2 cups water
2 cup sugar (of your choosing – pure cane will produce the lightest color syrup)
1. Clean your mint and remove the leaves from the stem. Compost the stems.
2. Place mint leaves in a large glass measuring cup. Boil the water and pour it over the mint.
3. Steep for 20-30 minutes
4. Strain the liquid into a saucepan, add the sugar and bring to a boil.
5. Remove from heat and pour into a glass bottle. Can be stored in the fridge for a good, long while.
Why You Want to Make Mint Syrup
So, now you’re saying, great! This is easy to make! But then you think to yourself…. WHY would I want to make this? Well, I’m gonna tell you!
There are many things you can do with mint syrup! You can add it to:
- coffee, tea or hot chocolate
- many different types of alcoholic beverages
- icing and glazes
- homemade snow cones.
