I have two little girls and they love all things pink. Additionally, one of these two little girls refuses to eat almost anything that could be deemed “healthy.” So, I’ve been getting creative. I present to you: pink pancakes made with beets.
Yes, you heard that right – pink pancakes made with beets. Sounds weird? Well, I assure you, they are not. In fact, they are quite delicious and even my beet loathing husband eats them right up. So, if you are struggling at home with a picky eater (like I am) or you just want to whip up a healthy, Valentine’s Day appropriate breakfast, give these pink pancakes a try. (Not convinced? Pink Pancakes made with Beets
Ingredients
1 1/3 cup whole wheat flour
1 tsp baking powder
3/4 tsp baking soda
3/4 tsp salt
3/4 cup buttermilk
3 tbsp honey – http://amzn.to/13dp0Ds
1 egg
2 tbsp butter
5 tbsp pureed, cooked beets *
Directions
1. Combine the first four (dry) ingredients in a large bowl.
2. In a second, smaller, bowl, combine the five wet ingredients (being sure to let the butter cool first, so as not to cook the egg).
3. Add the wet ingredients to the dry and mix well.
4. Heat an electric griddle – http://amzn.to/14S0laR to 325 degrees. Pour 1/4 cups of batter onto the preheated griddle and allow to cook until bubbles appear on the surface of the pancake. Then flip and cook the other side thoroughly.
5. Serve immediately topped with butter and warm maple syrup – http://amzn.to/1frZb9o .
Makes about 8 pink pancakes
*You can definitely add more beets if your kids/husband can handle it. Just be sure to add a little more flour to compensate for the extra moisture.

I think this is a great idea. We have carrot cake why not ad other veggies to the mix:) I love red velvet cake and I have been wanting to use beets for red instead of food dye.
