Granola Making

One thing that I strive for as we embrace the urban homesteading life is to make more food from scratch.  I want to buy less processed, readymade food.  I want to buy more whole ingredients and create delicious meals and snacks.  We already do most of our eating at home and I do a fair amount of cooking, but the Goldfish Crackers and boxed cereal still readily flow from our cupboards.

With that in mind, I’ve started making granola.  It is delicious and a lot cheaper to make than it is to buy in the store.  We eat it dry as a snack or on top of yogurt or with milk in place of boxed cereal.

So, without further ado, the recipe.  Give it a try and let me know what you think.

Cinnamon-Almond Granola

Ingredients 

4 cups regular rolled oats
1 1/2 cups sliced almonds
1/2 teaspoon salt
1/2 teaspoon cinnamon
1/2 cup coconut oil
1/3 cup raw honey
1 teaspoon vanilla

Directions 

1. Preheat oven to 300F.  Combine oats, almonds, salt, and cinnamon.  Heat oil and honey in a saucepan until warm.  Stir in vanilla.  Pour over oat mixture and stir gently.

2.  Spread mixture into a pan. (I use a 13×9 roasting pan.) Bake 45 minutes, stirring every 15 minutes.
